  Banana Tapioca Pudding Ingredients: 5- 6 ripe bananas  1 can coconut milk 1 ½  cups small tapioca ½ cup roasted peanuts  2-3 cups water  ¼ tsp salt 3 tablespoons sugar (can add more to your taste) 1 small red yam (optional) How to prepare it: Soak tapioca pearls in water for an hour Peel and slice bananas in small pieces Cut yams in a small cubes Slightly crushed roasted peanuts How to cook it: Drain tapioca pearls. in a pot, bring 3 cups of water to a boil, add in red yams and tapioca. Cook and stir frequently to prevent scorching until the yams are  soft and the tapioca pearls become clear. Add in coconut milk, sugar, and salt, bananas Stir gently and let the mixture simmer for 3-5 minutes until bananas  are slightly soft  Can add more sugar to your taste  Banana Tapioca Pudding Garnish dessert with toasted peanuts Enjoy!

  Sweet Sticky Pandan Rice  Vietnamese Xoi La Dua Ingredients: 2 cups of glutinous rice  A couple drops of green food color ¼ tsp of pan of pandan extract ½ of coconut milk 1 tsp of salt ¼ cup of sugar (can add more or less) ¼ cup of dried coconut   For Topping: Toasted peanut, toasted sesame, dried coconut, sugar, salt  How to make it: Soak glutinous rice in water overnight  Drain the rice in colander Add in pandan essence, sugar, salt, and food coloring Mix well until the grains have an even color Mixed glutinous rice  Seasoned glutinous rice How to cook glutinous rice: In a steam pot, bring water in the steamer to boil,  add the seasoned glutinous rice, and cover with lid  Steam until a grain of rice grain can be squished in your fingers,              but are still slightly firm About 15 minutes, add in coconut milk into the rice and continue  to cook for 10-15 minutes Remove and let cool for about 5 minutes Cooked Sweet Sticky Pandan Rice  Remove the rice and top with coconut, sesa

  Home Make Lasagna   Ingredients 1lb ground beef 1 medium chopped onion 3 minced garlic cloves  15 oz tomato sauce 15 oz crushed tomatoes 7 oz tomato paste 2 tbsp sugar  2 tsp salt ½ cup water ½ tsp black pepper 1-2 tsp dried basil leaves 2 tsp dried parsley 2 cups shredded mozzarella cheese 15 oz ricotta cheese ½ cup grated parmesan cheese 2 medium eggs 12 oz lasagna noodles How to make the meat sauce:   Add ground beef to a large skillet over medium heat Add in onion, garlic and cooked until meat is browned Add in tomato sauce, crushed tomatoes, tomato paste, sugar,  salt, water, 1 tsp basil, black pepper, 2 tsp parsley Stir until well combined, cover and let it simmer with low heat  for 30 minutes Tomato meat eat sauce How to make the ricotta cheese:  In a large bowl, add in the ricotta cheese, 1 cup mozzarella,  ¼ parmesan, 2 tsps parsley, eggs, 1tsp salt and 2 tbsp basil Stir until well incorporated Ricotta cheese mixed   Cooked pasta How to cook lasagna noodle: Place a large pot

  BoBa Milk Tea Ingredients: 3 servings 8 cups of water 1 cup dried boba pearls 1 ½ tabs honey or sugar (can put more or less) 1 cup of black or green tea ½ cup of milk, almond milk, or evaporated milk 1 cup of ice cubes Dried boba pearls How to cook the boba pearls: In a saucepan, bring 8 cups of water to boil over high heat. Add the boba pearls into the hot water and stir gently until they begin to float to the top. Turn the heat down to medium and cook for 40 minutes, stir occasionally. Remove from heat, cover, and let it sit for another 20 minutes. Cooked Boba Drain the boba pearls and transfer them to a small bowl.  Mix with sugar or honey and fully coat. Set aside for 5 minutes. How to make tea: Boil water until it reaches between 210 F. Self-Care during election and Covid-19.

We know this can be extremely stressful times, and it's therefore extra important to practices some self-care. So we at the WRC thought we would share our best tips for self-care during election season and this pandemic.  1. Take a walk, get some fresh air, take a little break from social media and news!  2. Value sleep, rest, and relaxation, it is okay to only focus on yourself for a while. maybe try something new, such as yoga or meditation.  3.  Don't forget to breathe, there is still good and love in the world.  4. check in with friends or family for support!  5 . Create, dance, write, sing, art can be a powerful tool when reconnecting with yourself or healing from trauma.  6 . Say no, you are allowed to say no, only you know what your limit is.  7. Again, you are not alone. Healing and taking care of yourself is a process.

Salmon Fish Porridge Ingredients: 3/4 cup jasmine long grain rice 6 cups water 1 ½  lbs salmon (can use snapper, cod, or striped bass) 1-2 slices peeled ginger and some thinly julienne  1 ½  salt 3 cloves minced garlic 3 shallots (sliced into thin and a small pieces) 2 tbsp olive oil Some fish sauce (optional) 1 medium onion peeled and cut into a small pieces ½ cup chopped green onion ⅓ cup cilantro  2 tbsp black pepper  Bean sprouts (optional) Salmon   Directions: Season the fish with a few dashes of fish sauce or salt and pepper Wash rice, drain in a strainer, then set it aside.  In a nonstick pot, add in olive oil, shallots, garlic, onions, ginger             and stir it until its color is slightly browned. Add in rice and continue to stir for a minute, then add in the fish  chunks and stir fry for a few minutes Add in water and continue to cook with medium heat,     stir occasionally. When the rice looks like porridge, you can add more water to thin  it out if it is too thick
