  Chicken Lemongrass After the chicken lemongrass is done Transfer to a plate and top with cilantro. Serve with steamed white rice. Ingredients: (8 people) A whole chicken (cut into 2 inch pieces) 5 oz white or purple onion, or shallot (minced) 3- 4 stalks fresh lemongrass (minced) 3 oz garlic (crushed) 4 tbsp cooking oil 1 ½ tsp sugar 2 tsp red pepper flakes or 3 chilies (seeded and minced) 1 ½  tsp curry powder 2 tbsp fish sauce 1 tsp paprika 1 tsp chicken powder 6 tbsp water Some cilantro or scallion for garnishing       How to make it:    Heat pan over high heat. Add cooking oil and heat until simmering,  then add in garlic, onion and stir-fry for 10 minutes. Then add the lemongrass  and stir-fry for another 2 -3 minutes. Add in the red pepper, curry powder, paprika, fish sauce, sugar, water and stir-fry until fragrant. Then add in the chicken.  Stir-fry until the chicken is cooked through and the sauce  is slightly thickened.  Enjoy!

Quarantined Life with baby sibling! Pt 3 - Kasandra

In my last post I talked about how it's been an exciting time since he is learning to crawl, walk, and talk. I also mentioned that he's been having some trouble sleeping as well. Recently we had a bit of a big scare. Normally for his naps I either stay with him in my room or if I have a lot of things to do, I will leave him in my room with pillows and a big teddy bear next to him so he doesn't feel alone or roll off the bed. Sadly, over the weekend this was not helpful. Somehow he rolled off of my bed. He did not get seriously get injured but we got super scared because we still don't know how he fell and ended up on his stomach crawling under my desk. My desk is next to my bed but in a horizontal position compared to my bed which is in a vertical position. We checked his head multiple times, there were no bumps. We checked the rest of his body and there were no bumps or bruises either. We thought maybe he fell on his stomach so we made sure that he didn't hit his m

  JJAMPPONG (Koren Noodle Soup) Ingredients: (6 people) 3.6oz zucchini or yellow squash 5 oz mushrooms 8.6 oz cabbage or lettuce 1.5 oz white onion 1.5 oz purple onion  32 oz seafood combo (a combination of raw squid tentacles, squid slices,  cooked mussel, meat and shrimp) 12 large mussels (optional) 12 large prawns (optional) 12 littleneck clams (optional) 7 oz pork pork belly strips/pork loin strips (optional) 16 oz baby bok choy/baby spinach 6 tbsp cooking oil 6 tbsp Korean chili flakes or more (adjusted to your teste) 2 tsp minced ginger 15 oz green onion 2 tbsp rice wine 4-5 tbsp soy sauce 8-10 cups water  ½ tsp salt or more (adjusted to your taste) Seafood and mushroom How to make it: Clean anchovies and then boil them in a small pot for  15-20 minutes, take anchovies out and put them aside.  Flan   It is very easy to make and is delicious. Ingredients:  Caramel: ⅔ cup sugar ⅓ cup water Custard: 3 eggs 1/2 cup sugar 2 1/2 cups milk or 1tsp vanilla extract 1 tbsp condensed milk (optional)   How to make the caramel:   Add sugar and a little of water into a pot Put pot on stove with a medium low Keep on whisking wait until the caramel has reached the exact color that you want Pour caramel into the bottom of ramekins. Put the ramekins into a baking pan and set them aside (they are harden at room temperature) How to make the custard: Put eggs into a big bowl, add in vanilla extract and then whisk  them for a minutes or a little more Add milk, sugar, and a print of salt and then keep on whisking for a few minutes   Pass the custard through a sieve to removes any lumpy bits   The custard already through a sieve  Start to fill the ramekins with custard, then pour a half full of water into baking pan  and bake caramel at 350 F for about 35-40 minutes   Take caramel out from the ove

 In my last post about my brother, I talked about how it can be very overwhelming to take care of a baby and how exciting it is that he's always learning something new. Recently he's started to crawl a little bit and want to walk as well. He'll want to stand up with us holding his hands and start walking a little which is exciting! He's starting to talk a little as well. He can say mama, dada, agua (which is water in Spanish) really easily. He's trying to say other stuff as well like comer (eat in Spanish). He says tetita which is his way of saying bottle for when he wants to take his nap. We recently got him a walker where he's been learning to walk a little more on with us right behind him so he doesn't fall. During these heat waves, he's been in a bit of a fussy mood because he doesn't like the heat as much. We try to keep him in cool places so he's able to be calm and he is for the most part.   Banh Mi Sandwich This is a sandwich I make at home for my family. It is a very popular and easy to eat.  Ingredient:  Bread, chicken breast, ham, cucumber, cilantro, Jalapeno pepper, carport and daikon pickles White meat chicken spread, and mayonnaise.  I use the mayonaise mayonnaise for sandwiches.  This is white meat chicken spread.  The steps how to make it:  Bake bread in a small oven for few minutes (optional) Cut bread into half  Spread a thin layer of chicken spread onto the bread Spread a layer of mayonnaise  Place the chicken breast and ham slices  Put cucumber, cilantro, and carrot and daikon pickle Put Jalapeno for spice (optional)   The carrot and daikon pickle   Banh Mi Sandwich This is a sandwich I make at home for my family.
