Chicken Lemongrass



After the chicken lemongrass is done

Transfer to a plate and top with cilantro.

Serve with steamed white rice.


Ingredients: (8 people)

  • A whole chicken (cut into 2 inch pieces)

  • 5 oz white or purple onion, or shallot (minced)

  • 3- 4 stalks fresh lemongrass (minced)

  • 3 oz garlic (crushed)

  • 4 tbsp cooking oil

  • 1 ½ tsp sugar

  • 2 tsp red pepper flakes or 3 chilies (seeded and minced)

  • 1 ½  tsp curry powder

  • 2 tbsp fish sauce

  • 1 tsp paprika

  • 1 tsp chicken powder

  • 6 tbsp water

  • Some cilantro or scallion for garnishing

     

     

     How to make it: 

      Heat pan over high heat. Add cooking oil and heat until simmering, 

then add in garlic, onion and stir-fry for 10 minutes. Then add the lemongrass 

and stir-fry for another 2 -3 minutes.



Add in the red pepper, curry powder, paprika, fish sauce, sugar,

water and stir-fry until fragrant. Then add in the chicken.



 Stir-fry until the chicken is cooked through and the sauce

 is slightly thickened.
