Sweet Sticky Pandan Rice
Vietnamese Xoi La Dua
Ingredients:
2 cups of glutinous rice
A couple drops of green food color
¼ tsp of pan of pandan extract
½ of coconut milk
1 tsp of salt
¼ cup of sugar (can add more or less)
¼ cup of dried coconut
For Topping:
Toasted peanut, toasted sesame, dried coconut, sugar, salt
How to make it:
Soak glutinous rice in water overnight
Drain the rice in colander
Add in pandan essence, sugar, salt, and food coloring
Mix well until the grains have an even color

How to cook glutinous rice:
In a steam pot, bring water in the steamer to boil,
add the seasoned glutinous rice, and cover with lid
Steam until a grain of rice grain can be squished in your fingers,
but are still slightly firm
About 15 minutes, add in coconut milk into the rice and continue
to cook for 10-15 minutes
Remove and let cool for about 5 minutes
Cooked Sweet Sticky Pandan Rice
Remove the rice and top with coconut, sesame, and peanuts
This is a wonderful dish that can be eaten anytime!
