Sweet Sticky Pandan Rice 

Vietnamese Xoi La Dua


Ingredients:

  • 2 cups of glutinous rice 

  • A couple drops of green food color

  • ¼ tsp of pan of pandan extract

  • ½ of coconut milk

  • 1 tsp of salt

  • ¼ cup of sugar (can add more or less)

  • ¼ cup of dried coconut

 

For Topping:

Toasted peanut, toasted sesame, dried coconut, sugar, salt

 How to make it:

  • Soak glutinous rice in water overnight 

  • Drain the rice in colander

  • Add in pandan essence, sugar, salt, and food coloring

  • Mix well until the grains have an even color

How to cook glutinous rice:


  • In a steam pot, bring water in the steamer to boil, 

add the seasoned glutinous rice, and cover with lid 

  • Steam until a grain of rice grain can be squished in your fingers,

             but are still slightly firm

  • About 15 minutes, add in coconut milk into the rice and continue 

to cook for 10-15 minutes

  • Remove and let cool for about 5 minutes


Cooked Sweet Sticky Pandan Rice 


Remove the rice and top with coconut, sesame, and peanuts

This is a wonderful dish that can be eaten anytime!
