Banana Tapioca Pudding



Ingredients:

  • 5- 6 ripe bananas 

  • 1 can coconut milk

  • 1 ½  cups small tapioca

  • ½ cup roasted peanuts 

  • 2-3 cups water 

  • ¼ tsp salt

  • 3 tablespoons sugar (can add more to your taste)

  • 1 small red yam (optional)



How to prepare it:

  • Soak tapioca pearls in water for an hour

  • Peel and slice bananas in small pieces

  • Cut yams in a small cubes

  • Slightly crushed roasted peanuts


How to cook it:

  • Drain tapioca pearls.

  • in a pot, bring 3 cups of water to a boil, add in red yams and tapioca.

  • Cook and stir frequently to prevent scorching until the yams are 

soft and the tapioca pearls become clear.

  • Add in coconut milk, sugar, and salt, bananas

  • Stir gently and let the mixture simmer for 3-5 minutes until bananas 

are slightly soft 

  • Can add more sugar to your taste

Garnish dessert with toasted peanuts
