Banana Tapioca Pudding
Ingredients:
5- 6 ripe bananas
1 can coconut milk
1 ½ cups small tapioca
½ cup roasted peanuts
2-3 cups water
¼ tsp salt
3 tablespoons sugar (can add more to your taste)
1 small red yam (optional)
How to prepare it:
Soak tapioca pearls in water for an hour
Peel and slice bananas in small pieces
Cut yams in a small cubes
Slightly crushed roasted peanuts
How to cook it:
Drain tapioca pearls.
in a pot, bring 3 cups of water to a boil, add in red yams and tapioca.
Cook and stir frequently to prevent scorching until the yams are
soft and the tapioca pearls become clear.
Add in coconut milk, sugar, and salt, bananas
Stir gently and let the mixture simmer for 3-5 minutes until bananas
are slightly soft
Can add more sugar to your taste
Banana Tapioca Pudding
Garnish dessert with toasted peanuts
